What is a gluten free diet and why is it important? Avoiding this protein called gluten, found
in grains such as wheat, barley and rye, is one way for many Americans with wheat allergies or other digestive disorders to maintain
a healthy lifestyle. But there are so many everyday foods that can contain gluten, such as processed foods, cakes and pies, pastas,
soups, cereal, etc., that it can be a challenge to eat gluten free.
We at Zojirushi still want to make cooking fun and eating pleasurable. Our issue this month focuses on gluten free, but our recipes

experts estimate that 15% to 25% of consumers want gluten free foods, even though less than 1% of Americans have actually been
diagnosed with celiac disease, the best-defined and most severe form of gluten intolerance. |
